are prepared from fresh ingredients. We're

Choux
puff with prawns:
Freshly baked puffs of choux pastry stuffed with Atlantic prawns in a
dressing of creamed Crowdie with chives.
Crab
Madeline:
The classic Madeline is sweet but this titbit is made with white and brown
crab meat to give a supremely delicate morsel.
Duck
with hoisin sauce, red pepper and syboe:
A taste of the orient with thin slices of smoked duck breast presented
on a sesame and poppy-seed cracker with hoisin sauce and fine roasted
pimento and spring onion.
Marinated
fillet of beef parcel with potato salad:
Our special recipe of potato salad with parmesan and chives wrapped in
the thinnest slice of raw beef marinated in red wine.
Electric
consommé with herbed straw:
A shot of hot consommé spiked with Tabasco and Vodka and served
with a herbed puff pastry stick.
Quail’s
egg and smoked salmon tartlet.
A little tart filled with smoked salmon and vegetable salad topped with
a gently poached quail’s egg and cocktail sauce.
Smoked
venison and pate with pistachio
A little cornet of smoked venison resting on a mango slice and piped full
with a fine chicken liver pâté and decorated with pistachio
nuts.
